Chicken and Shrimp Paella

Makes 4 Servings

Ingredients:

  • 2 tsp. olive oil
  • 1 boneless skinless chicken breast, cubed ½”
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 14 oz. can chicken stock
  • 1 14 oz. can chopped tomatoes
  • ½ of a red bell pepper, chopped
  • 1 tsp. saffron threads
  • ½ tsp. salt
  • 2/3 cup brown rice
  • 1 cup frozen peas
  • ½ lb. medium peeled shrimp
  • ½ cup white wine
  • 1 tsp. hot sauce
  • ¼ cup chopped parsley

 

Directions:

Heat oil in a large sauté pan; add chicken, sauté for 5 minutes, turning 1 time.  Remove chicken from pan, cover and set aside.

Add onions and garlic to pan and cook for about 5 minutes, add chicken stock, tomatoes, saffron and salt.  Bring to a boil add wine, hot sauce and rice; simmer for 50 minutes on low heat.

Add peas and red pepper and simmer covered for another 5 minutes until rice is tender, stir in chicken and shrimp, cook covered until shrimp is cooked through, about 2 minutes.
