Makes 10 cookies
- 1 cup almond meal
- 1/8 teaspoon salt
- 1/8 teaspoon baking soda
- 2 tablespoons melted coconut oil
- 2 tablespoons raw honey
- 1 teaspoon vanilla
- 1 tablespoon unsweetened almond or coconut milk
- 1/4 cup dark chocolate chips (> 70% cocoa)
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
Combine dry ingredients. Whisk together wet ingredients. Add wet ingredients into dry, mix until just combined and add chocolate chips. Use a tablespoon to measure out dough. Place rounded tablespoons on parchment paper – do not flatten dough.
Bake 10-11 minutes until bottoms start to brown. Cool for 2-3 minutes on baking sheet then transfer to wire rack.
