Slow Cooker Texas-Style Chili

Serves 6-8

Ingredients:Texas-Style Chili

  • 1 tablespoon unsweetened cocoa powder
  • 1/4 cup chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 poblano chile, seeded and finely chopped
  • 2 celery ribs, chopped
  • 4 large carrots, peeled and chopped
  • 2 pounds grass-fed ground beef
  • 3 (15 oz.) cans black beans, rinsed and drained
  • 1 (28 oz.) can crushed tomatoes
  • 1 (15 oz.) can diced tomatoes

Directions:

  • Brown ground beef in a pan and season with salt and pepper.
  • Transfer ground beef to a slow cooker and add the remaining ingredients.
  • Cook on low for 5-8 hours.
  • Stir occasionally and adjust seasoning if needed.
